Cheap, Tasty, Meat-free Recipes for Students on a Budget

There really isn’t anything better than chomping into a rich, meaty meal! Unfortunately, these dinnertime dishes can eat a hearty chunk out of your student budget. Luckily, there are always options that won’t break the bank – here are two delicious meat-free recipes that will fill you with delicious goodness.

Roast Potato with Stuffed Peppers

You’ll Need:

  •  1 red pepper, cut in half and seeds removed
  • 1 garlic clove, minced
  • Half a leek, chopped into small pieces
  • 5 button mushrooms
  • Half a baby marrow, sliced
  • Grated cheese (as much as you want)
  • Handful of broccoli
  • Handful of baby potatoes, cut into chunks

How it’s done:

Preheat the oven to 180 degrees Celsius

Boil the potatoes for 5 minutes and wrap your red pepper in a bit of tin foil, rubbed with some oil

Remove potatoes from the stove, drain and season with salt and pepper (and any other herbs you choose)

Place the potatoes and the red pepper in a roasting tray and put into the oven

In the meantime, grab a pan and fry the leeks and the garlic for 5 minutes before adding the broccoli and baby marrow. Lastly, add the mushrooms

Remove the tray from the oven, unwrap the tin foil and add the fried veggies and grated cheese. Re-wrap and return to the oven to cook until the potatoes and red pepper have browned

Remove, plate and salivate.

Potato and Cheese Pie

What You’ll Need:

  • Roll of puff pastry
  • 500 g of cooked, mashed potatoes
  • 2 cups of grated cheese
  • 3 tablespoons of butter
  • Salt and pepper

How it’s done:

Preheat the oven to 180 degrees Celsius

Add the grated cheese to your mashed potato and season well with salt and pepper

Roll your pastry until 1cm thick

Place your potato-cheese filling onto one side of the pastry and fold the side over. Flatten the edges with a fork

Brush the pastry all over with butter before placing in a greased baking tray and then in the oven

Bake until golden (approximately a half an hour)

Then settle back and enjoy your pie !
